Simple Asian Salad with a Ginger Honey Vinaigrette

I told you I am on a salad kick, right?

My latest obsession is a protein-packed asian inspired salad: Simple Asian Salad with a Ginger Honey Vinaigrette. The ginger in the dressing will seriously knock your socks off and probably settle your stomach at the same time.

I am a vegetarian, but you can easily add some grilled chicken or shrimp to the recipe to increase the protein even further – it already contains edamame and almonds.

Simple Asian Salad – What You Need:

For the salad {serves 4 people}:
2 cups mixed greens
1 cup cooked edamame {cook according to package}
1/3 cup toasted sliced almonds
1 large carrot {shave 1/2 cup worth of long peels}
1 cup cherry tomatoes {sliced in half}
1 small can of mandarin oranges in natural juices

For the dressing:
1 clove garlic {minced}
1 tsp peeled/chopped fresh ginger
1 tsp chopped green onion
1 tsp rice wine vinegar
1 tsp low sodium soy sauce
2 tbsp honey
1/2 cup extra virgin olive oil

The dressing for this salad is really delicious and my favorite part of the recipe. The ginger, garlic, and green onions really pack a punch and enhance the flavors of the soy sauce and honey.

If you are feeding little ones, prepare extra portions of the edamame, chopped tomatoes, carrots, mandarin oranges and use the dressing as a dipping sauce – two dinners in half the time!

The vibrant colors in this salad make it perfect for entertaining or simply cheering up your day!

Enjoy!

Mini Greek Pizza

I traveled to Greece several years ago and absolutely fell in love with the country. The fresh tomatoes, feta, and seafood completely won me over and I’ve never stopped trying to recreate my favorite meals since. In running a busy household with a picky toddler and hungry husband, I created a mini Greek Pizza recipe and knew it would be a hit – who can say no to pizza? I always strive to create simple, tasty, and healthy meals for my family and this recipe certainly meets the criteria.

Mini Greek Pizza Recipe

The healthy pizza is built on a protein packed multigrain roll {similar to a flatbread}, with hummus, fresh cherry tomatoes, cucumbers, kalamata olives, and a bit of feta cheese and olive oil – it couldn’t be simpler! The mini greek pizza is perfect for a light lunch, an afternoon snack or as an entree with a fresh salad served on the side. All the delicious details are below, enjoy!

Mini Greek Pizza

I used the OZERY Bakery brand of bread,which has 7g of protein, 4g of dietary fiber and 190 calories per serving {one roll} – not bad for a pizza. If you have the time, homemade hummus is a delicious option, but for this recipe I used Abraham’s Hummos – it is mild, yet flavorful.

Chop all of the vegetables and olives into bite sized pieces to spread across the hummos.

Before baking, top the pizza with a sprinkle of feta cheese {I used the crumbled version, but bite sized cubes would work as well} and a drizzle of olive oil.

The pizza is prepped and ready for the oven, yum! After 15 minutes, you will have a heathy mini greek pizza, perfect for the entire family to enjoy!
