I traveled to Greece several years ago and absolutely fell in love with the country. The fresh tomatoes, feta, and seafood completely won me over and I’ve never stopped trying to recreate my favorite meals since. In running a busy household with a picky toddler and hungry husband, I created a mini Greek Pizza recipe and knew it would be a hit – who can say no to pizza? I always strive to create simple, tasty, and healthy meals for my family and this recipe certainly meets the criteria.
Mini Greek Pizza Recipe
The healthy pizza is built on a protein packed multigrain roll {similar to a flatbread}, with hummus, fresh cherry tomatoes, cucumbers, kalamata olives, and a bit of feta cheese and olive oil – it couldn’t be simpler! The mini greek pizza is perfect for a light lunch, an afternoon snack or as an entree with a fresh salad served on the side. All the delicious details are below, enjoy!
I used the OZERY Bakery brand of bread, which has 7g of protein, 4g of dietary fiber and 190 calories per serving {one roll} – not bad for a pizza. If you have the time, homemade hummus is a delicious option, but for this recipe I used Abraham’s Hummos – it is mild, yet flavorful.
Chop all of the vegetables and olives into bite sized pieces to spread across the hummos.
Before baking, top the pizza with a sprinkle of feta cheese {I used the crumbled version, but bite sized cubes would work as well} and a drizzle of olive oil.
The pizza is prepped and ready for the oven, yum! After 15 minutes, you will have a heathy mini greek pizza, perfect for the entire family to enjoy!
I hope you enjoy the recipe as much as my family has! Comment and share your favorite Greek inspired recipes below!
